Hello beautiful!
Did you know most store-bought granola is packed with sugar and has barely any protein? This homemade high protein granola changes everything. Each serving has about 20g of protein and 11g of fiber, plus all the cozy flavors of your favorite pumpkin spice latte. It’s made with simple, real food ingredients like oats, pecans, walnuts, seeds, and a splash of coffee, and it bakes into big, crunchy clusters. Sprinkle it over Greek yogurt, enjoy it with milk, or grab a handful for an easy healthy snack. Fall in a jar! 🎃

Vanilla Chai Overnight Oats

Dry Ingredients:
> 4 1/2 cups old-fashioned rolled oats
> 1 1/2 cups chopped pecans and walnuts
> 1/3 cup pumpkin seeds
> 3 tbsp sunflower seeds
> 3 tbsp flaxseed
> 3 tbsp cacao powder
> 2 tsp ground cinnamon
> 2 tsp pumpkin pie spice
Wet Ingredients:
> 1/3 cup honey or maple syrup
> 1/3 cup + 1 tbsp almond butter
> 1/3 cup brewed coffee or espresso
> 2 tsp vanilla extract
> 2 tbsp coconut oil
> 2 egg whites (or 1/4 cup liquid egg whites)
After Baking:
> 1/2 cup dried cranberries or chopped dried apples
> Pinch of flaky salt
Homemade Dried Apples:
> Core 2 Cosmic Crisp apples and slice about 1/8 inch thin (a mandoline helps).
> Lay in a single layer on parchment-lined sheets and dust with cinnamon.
> Bake at 200°F for 2 to 3 hours, flipping halfway, until dry and leathery.
> Cool completely (they crisp up as they cool), then chop.
Instructions:
1. Preheat the oven to 325°F and line a large baking sheet with parchment.
2. In a large bowl, mix together all the dry ingredients.
3. In a small saucepan over low heat, warm the honey, almond butter, coffee, vanilla, and coconut oil, stirring until smooth.
4. Pour the warm mixture over the dry ingredients and stir until everything is coated.
5. Whisk the egg whites (fresh or liquid) until frothy, then stir them in. This is the secret to big clusters!
6. Spread evenly on the baking sheet, sprinkle with salt, and press down firmly with a spatula.
7. Bake 35 to 40 minutes, rotating the pan halfway. Start checking at 30 minutes, since it browns quickly.
8. Let it cool completely on the tray before breaking into clusters, then stir in the cranberries or apples.
ENJOY!!
Charlene's Tips:
> Want the spice to shine? Reduce the cacao to 1 tbsp.
> Extra cozy: use maple syrup instead of honey.
> Using homemade apples? Dry them fully, or store them separately and add per bowl, so the granola stays crunchy.
> Store in an airtight glass jar for up to 1 week.
> Protein counts vary by brand, so check your labels for the most accurate numbers.
