Healthy Apple Pecan Pancakes

It's that time of year again... The leaves have started changing colors... The weather is getting cooler... and everyone is pulling out their pumpkins and Halloween decorations... So you know what that means... It's officially FALL 🍂🍁
Now you may or may NOT know this but I LOVE pancakes!! It was our family tradition to make pancakes every Sunday and in college when I was really broke I would just buy a big bag of Krustees pancake mix from Costco and make pancakes and eggs for dinner! 😅
Now days I choose to make a healthier version of pancakes and I am constantly trying new recipes! From SIBO gut friendly pancakes, to coconut blueberry pancakes, banana pancakes, and of course pumpkin pancakes! And they are all really delicious BUT I have to say... I think these apple, pecan pancakes just might be my ALL time favorite of all! They are naturally sweet thanks to the ripe banana base, the fresh apples, and vanilla. But they are also SUPER moist and hearty thanks to the apples, pecans, and oat flour! They might not look super beautiful... but let me tell you... the amount of flavor these pancakes have will have you reaching for seconds! So without further ado... let's get to cooking!
Healthy Apple Pecan Pancakes
Dry Ingredients:
> 1 cup oat flour
> 1/2 tsp baking soda
> 1 tsp cinnamon
> 1/2 tsp salt
> 1/2 of a honey crisp apple - cubed
> 1/2 cup pecans - chopped
Wet Ingredients:
> 1-2 ripe banana -mashed (You want about 3/4 cup mashed banana)
> 1 large egg
> 1 tsp vanilla
> 1/2 tsp apple cider vinegar
> 1-2 TBSP of water if needed
Instructions:
1. Mix all the dry ingredients together accept for the apple and pecans.
2. Mash the banana. Then add the rest of the wed ingredients accept for the water leave that for the end.
3. Add the wet ingredients to the bowl of dry ingredients and mix together. Depending on how big your banana was your mixture might be pretty dry. That's OK!!
4. Slowly add a little bit of water at a time until your batter starts to look like pancake batter. You don't want it to be TOO wet so just go slow.
5. Once you have the proper consistency add the chopped apples and pecans to the mixture. Yes it will be very bumpy! It's ok!
6. Heat the pan to medium low heat and use a small amount of coconut oil or butter in the pan.
7. Add 1/2 cup of pancake mixture to the pan. Check the pancake every 2-3 minutes. When the bottom is a beautiful golden brown it's ready to flip. Just keep an eye on your pancakes as they are so dense that you won't be able to see the normal telling signs that they are ready to flip!
8. Now you can garnish these pancakes however you like! For me personally they are moist and so flavorful I like to eat them by themselves. But if you want a truly decadent treat add some real butter and 100% pure maple syrup for a fun Fall treat!
