Hi guys! Are you ready for the easiest dinner recipe that is so delicious and nourishing?!?

As a busy mom I've realized all the added benefits of slow cooker meals and this one is by FAR one of the favorites in my house hold!

A few years ago I was diagnosed with SIBO gut issues and started a journey of discovering how to cook without using garlic and onion (my 2 go to staple ingredients previously!) So please know that if you do not have a sensitive gut please feel free to add garlic and onion where you see fit! And IF you choose to do so please feel free to use your cooking oil of choice. Typically I cook high heat foods with avocado oil. However, if I am trying to add in a garlic taste I will use garlic infused olive oil as my stomach can tolerate that and it adds SO much flavor to a dish when you can't actually use a clove of garlic! But like I always say do what is best for YOUR body always!

Alright, let's make dinner!

Gut Friendly Pot Roast

Ingredients:

> 2-3lb chuck roast

> 1- 24oz Beef Bone Broth

> 1 cup red wine (merlot & cab work best)

> 2 TBSP Garlic Infused Olive Oil

> 1 sprig fresh rosemary

> Salt & pepper

> 3 Medium carrots

> 3 Celery stalks

> Baby potatoes or sweet potatoes

Instructions:

1. Heat garlic olive oil in a pan on high heat. Salt and pepper the chuck roast on both sides while the pan is heating up. Then sear the chuck roast for 2 minutes on each side.

2. While you are searing the roast, wash and chop your celery and carrots and place in the bottom of your crock pot. *If you are adding baby potatoes to the dish add them now as well*

3. Once the chuck roast has been seared on every side place on top of the vegetables in the crock pot. Scrape any leftover olive oil or drippings from the pan into the crockpot.

4. Add your bone broth and wine to the crock pot.

5. Place your sprig or two of rosemary on top of the pot roast.

6. Cook on low for 8 hours

7. Allow pot roast to cool slightly before serving.

My all time favorite way to serve this meal is with mashed white sweet potatoes. But if you have opted for baby tomatoes then you're all set! Just serve and enjoy this nourishing, gut healing meal!
