Hello beautiful!

If my family calls something pasta, you know it has to be good -- and this butternut squash "pasta" is one of our absolute favorites. There is no actual pasta in this dish but honestly nobody misses it! Tender butternut squash takes the place of noodles and gets paired with my homemade chicken Italian sausage for a meal that is packed with flavor, high in protein, and so satisfying without feeling heavy.

Everything comes together in one pan which means less cleanup and more time doing the things you actually love. I cook the butternut squash separately first since it needs a little more time, then bring it all together with the sausage and it is honestly one of those meals that looks and tastes like you spent way more effort than you did.

This one is a weeknight staple in our house and I have a feeling it is about to become one in yours too. Clean ingredients, real food, and a recipe the whole family will actually ask for again. That is the kind of cooking I am all about.

Butternut Squash "Pasta"

Ingredients:

> 2 lbs homemade chicken Italian Sausage

> Medium sized butternut squash

> 3-4 fresh sage

> 1/2 lemon (juice only)

> 1 TBSP unsalted butter

> salt and pepper to taste

Instructions:

1. Peel butternut squash and cube. Pan cook on medium heat with 1tablespoon olive oil in the pan, salt and pepper. Cook stirring often until the squash is soft.

2. Once the butternut squash is in the pan, make your homemade chicken Italian sausage and cook it in a separate pan until fully cooked through.

3. Once butternut squash is soft add butter and allow to melt over the squash, add chopped sage to the pan with the butter and let it cook the sage and get a little crispy (1-2 minutes). Then turn off heat and use the juice from half of one lemon and squeeze over the squash. Then add cooked Italian sausage to the pan and mix well.

4. Enjoy over a bed of mixed greens! If you want to take this up a notch add a fried egg on top!! SOOOOO delicious!!
