This homemade chicken Italian sausage is one of those recipes I keep coming back to again and again because it is just so easy, so clean, and honestly so versatile. Made with simple ground chicken breast and a handful of Italian herbs and spices, it comes together in minutes and works with just about everything -- scrambled into eggs, stuffed into egg cups, tossed with roasted veggies, or crumbled over a salad.

I love that it gives you all the flavor of a classic Italian sausage without any of the fillers, preservatives, or mystery ingredients you find in store-bought versions. Just real whole food protein that your body actually recognizes and loves.

I like to make a big batch at the start of the week and keep it in the fridge or freezer so I always have a lean, flavorful protein ready to grab and go. It is one of my favorite ways to make healthy eating feel effortless even on the busiest days.

Homemade Chicken Italian Sausage

Ingredients:

> 2 lbs ground organic chicken (can use turkey if you prefer!)

> 2 tsp Italian seasoning

> 2 tsp parsley

> 1-1/2 tsp fresh cracked black pepper

> 1 tsp paprika

> 1/2 tsp fennel seed (I use whole, but you can used ground fennel if you like!)

> 1/2 or 1 tsp red pepper flakes (depending on how hot you like it)

> 2 tsp salt

Optional if you don't have a sensitive gut like me

> 1-2 tsp garlic powder

> 1 tsp onion powder

Instructions:

1. In a bowl, combine the ground chicken, and all of the seasonings and mix well.

2. Heat a pan over medium heat and add 1 TBSP garlic infused olive oil to pan, then add chicken and pan cook the chicken until chicken is full cooked through.

3. Store fully cooked leftovers in the refrigerator or freezer in an airtight container.
