Fall is officially upon us and I was thinking of a new fun way to enjoy this time of year with the foods that I love! This pancake recipe has 49.5 grams of complete protein and only 572 calories including the toppings!!

These are a new Fall favorite in my house for sure! I hope you love them as much as we do!

Healthy Apple Pecan Pancakes

Pumpkin Spice Protein Pancakes

Pancake Ingredients:

> 4 TBSP Tropeaka Lean Vanilla Protein

> 1/4 cup Bob's Redmill Gluten Free All-Purpose Flour

> 1 tsp baking powder

> A pinch of Pink Himalayan Sea Salt

> 1 tsp pumpkin pie spice

> 1/2 cup egg whites

> 3 TBSP unsweetened almond milk or milk of choice

> 1 TBSP pure maple syrup

> 1 TBSP canned pumpkin

> 1 tsp vanilla extract

> Coconut oil spray

Toppings:

> 1/4 of a small Honey Crisp Apple

> Optional spices you can add to your apples: cinnamon, ginger, ground nutmeg, & allspice (I use a little of them all)

> 1/2 tsp pure maple syrup

> CocoJune Vanilla Chamomile coconut yogurt or yogurt of your choice

Instructions:

1. Add all the dry pancake ingredients to a bowl. Then add the liquid ingredients on top and whisk together until smooth. Depending on your protein powder you might want to add a little more or less almond milk to create the right consistency. You want it to be thick but easy to put out of a bowl. This recipe will make 3 medium-sized pancakes.

2. Spray the cooking pan with coconut oil spray and cook pancakes on low to medium-low heat for about 5-7 minutes on each side or until cooked through.

3. While the pancakes cut up your apples into small cubes, spray a small pan with coconut oil spray and add apples to the pan. Cook on medium heat and sprinkle with your desired spices. Cook for 3-5 minutes and then drizzle the apples with the 1/2 tsp pure maple syrup to caramelize the apples a little.

4. Once pancakes and apples are done cooking add pancakes to a plate. Top the pancakes with 1 to 1-1/2 tablespoons of CocoJune Vanilla Chamomile coconut yogurt, top with cooked apples, and sprinkle with a little more pumpkin pie spice!
