Hello beautiful!

If you love dessert for breakfast, this one’s for you. This apple cinnamon baked oatmeal tastes like warm apple pie, but it’s packed with about 25g of protein per square thanks to protein powder, Greek yogurt, egg whites, and a dreamy cottage cheese drizzle. It’s the perfect high protein meal prep breakfast: bake it once on the weekend and you’ve got cozy, satisfying breakfasts ready for busy mornings all week long. Healthy, filling, and so delicious!

Ingredients For the Oatmeal:

> 1/4 cups unsweetened almond milk (homemade is great) or water

> 2 large eggs

> 3/4 cup liquid egg whites (about 6 large egg whites)

> 1 cup plain nonfat Greek yogurt

> 1/4 cup maple syrup

> 2 tbsp butter or coconut oil, melted

> 1/4 cup unsweetened applesauce

> 3 cups old-fashioned rolled oats

> 4 scoops vanilla whey protein (about 40g protein)

> 1 tsp baking powder

> 4 tsp ground cinnamon

> 3 tsp pumpkin pie spice

> 1 tsp salt

> 1 1/2 cups finely chopped apple (Honeycrisp is lovely)

High Protein Frosting Drizzle:

> 1 cup low-fat cottage cheese

> 2 tbsp maple syrup

> 2 tsp vanilla extract

> 1 to 2 tbsp vanilla almond milk, as needed

> 3 tbsp powdered sugar

> Optional: Pinch of cinnamon or pumpkin pie spice

> Optional: 1 scoop vanilla whey (add 1 extra tbsp almond milk if you do)

Instructions:

1. Preheat the oven to 350°F and grease a 9x9 or 11x7 baking pan.

2. Whisk in the protein powder until smooth and clump-free.

3. Stir in the oats, baking powder, cinnamon, pumpkin pie spice, and salt until fully combined. Fold in the chopped apple

4. Pour into the pan right away (the oats soak up liquid if it sits). Bake 35 to 40 minutes, until the center is almost set. A tiny bit soft in the middle keeps it moist.

5. Let it cool completely, then cut into 6 squares

6. For the drizzle, blend all ingredients until completely silky smooth. Chill 20 minutes if you'd like it thicker.

7. Drizzle over each square just before serving. Enjoy warm or cold!

Charlene's Tips :

> Store the drizzle separately in the fridge. Warm your square, then drizzle it cold for a cozy warm-and-cool combo.

> Almond milk or water? Both work! Almond milk gives a richer, creamier flavor

> Love bold spice? Bump the pumpkin pie spice to 1 1/2 tsp.

> Keeps covered in the fridge for up to 4 days, or freeze individual squares (without drizzle).

> Protein counts vary by brand, so check your labels for the most accurate numbers

ENJOY!!
