Hello beautiful souls!

We are knee deep into Fall and if I'm being honest with you, I have been eating this salad for MONTHS already! It is SO good!! And SO easy! The thing I love about it is that all you have to do is roast up your favorite veggies, and throw everything into a bowl! It's jam packed with nutrients. Its so beautiful and full of color! I just can't get enough!

This is also just an easy way to get a little extra greens into your day! What I love to do is make a big batch of this salad and have it for dinner one night and then I have the leftovers for the next couple of days for lunch! It's absolute perfection!

Plus! This would be an EXCELLENT salad to take to a holiday party! If you're stressing out about what kind of food will be there. Or maybe you KNOW that there won't be any healthy options available... BRING THIS SALAD!! It will be a crowd pleaser plus you'll have something healthy and delicious to eat!

Char's Favorite Fall Salad

Salad Ingredients:

> Root vegetables of your choice! Some of my favorites are: Butternut squash, beets, and carrots. You can do one of them or all three! Play around with different combinations and see what YOU like!

> 2 TBSP Avocado Oil

> Fresh Thyme 1/2 TBSP or however much you want

> 1-2 Sprigs of Fresh Rosemary (minced)

> 1-2 Bunches of Dinosaur Kale (washed and dried) Depending on how much salad you want to make.

> 1 Honey Crisp Apple (chopped)

> 1/4 Cup Pumpkin Seeds

> Goat Cheese Crumbles (optional for topping)

> Avocado (optional for topping)

Dressing Ingredients:

> 2 TBSP Apple Cider Vinegar

> 1-2 TBSP Olive Oil

> 2 tsp Dijon Mustard

> Salt & Pepper to taste

Instructions:

1. Preheat oven to 425 degrees F. Then cube all your root vegetables no bigger than 1/2 inch. PRO TIP: Try to keep them all the same size so they cook evenly and finish at the same time!

2. Drizzle root vegetables in avocado oil and sprinkle with salt and pepper, and fresh herbs of your choice. If you are going to add garlic this is the time to do so.

3. Cook for about 30 minutes. Keep checking on them to make sure you don't over cook them. You want them to be soft but not falling apart. Allow to cool before you add to your salad.

4. While the the vegetables are cooking prep your dinosaur kale. I wash my kale in water and apple cider vinegar and allow them to soak for 3-5 minutes. Rinse and pat dry.

5. Once kale is dry devein them and chop into bite sized pieces and place in a bowl.

6. Prepare the dressing. In a small bowl add all ingredients for dressing and mix together. Pour onto the chopped kale. Massage the kale for 3-5 minutes or until the kale has softened and reduced in size.

7. Add all your favorite toppings: Honey crisp apple cubes, pumpkin seeds, avocado, goat cheese, and of course all your deliciously roasted veggies!! You can enjoy this by itself or add it to any of your favorite meals! Enjoy!
