In January 2017 a dear friend told me about the book The Paleo Cure by Chris Kresser and asked if I would do the 30 Day elimination diet with her. I was a little apprehensive as I hadn't eaten meat in so long but I decided to give it a go. I started eating meat one bite a day with digestive enzymes (I will have the ones I used linked on the Resources Page!) and after the 30 days you would not believe how incredible I felt! What I LOVE about this elimination diet is that it is cut and dry and SO easy to follow! The best part of all... Chris Kresser understands that all of our bodies are different (go figure!) and that all of our bodies can tolerate different foods! So he teaches you how to reintroduce ALL food groups back into your diet while teaching you how to read the signs of your body to see if a food that you incorporated back into your diet is causing bloating or inflammation or if it's ok in YOUR body! AMAZING!
The biggest thing that I took away from The Paleo Cure was how to listen to MY body. Now whenever I feel bloated or inflamed at the end of the day I do a quick recap of the foods that I have eaten recently (in the past 3 days) and try to identify what could have caused the bloating. I am so in tuned with my body now and I am so grateful each and every day that I took that leap and did the 30 day elimination diet. It wasn't easy but it was SO rewarding! Highly recommend if you are looking for answers or you want to learn about your body!

When I first started looking for answers back in 2008-2009 I was told that I had Lupus. So my husband bought me a book called The Lupus Recovery Diet (an EXCELLENT read if you are at the beginning of your journey). This book was excellent for me because it's the first time I ever heard people talk about chronic illness and chronic pain and I could relate to their stories. In this book they talk about how eating a plant based diet is the best way to eat if you have inflammation in your body. So i did! I cut out meat (chicken, pork, beef, I still ate fish 1-2 time a month and I never cut out eggs) and started eating in a vegan style and because I already felt so crummy I didn't notice how bloated I was. Nor did I focus on adding in vitamin B12 to supplement not eating it any more... Nonetheless, I continued eating in this manner until January of 2017.
